Two ad-blocking dns servers that respect your privacy and do not keep logs are preset:
1️⃣ Adguard
2️⃣ Libredns

This solution is "dumb".
1️⃣ doesn't switch back after X minutes etc.
2️⃣ switches to the first or other private dns server as soon as the system notifies the network can't connect to the private dns. In theory this could mean infinitely switching if both DNS servers are down.

Assumptions:
1️⃣ You already have the private dns settings up and running.
2️⃣ Automate runs at boot

⚠️ WRITE_SECURE_SETTINGS is a must, required to update your private dns settings.
